After taking IOPA and confirming that the pulp was safe, i proceeded to do a composite filling followed by polishing..

What kind of polishing system should one use

Any polishing system from a branded company will work. Polishing should be done preferable after 24 hours after the filling. use surface sealants.

use interdental polishing strips if required.
